So I’ve been talking about food a lot recently with my friends and not done a lot of sharing here. So here is my ‘boyfriend winning’ steak topping recipe. I always got another date after I’d served this recipe, and it’s been a firm favourite of my husband’s since I served it to him.
It’s very rich, so we don’t have it often. I’d promised him this recipe on our first Christmas alone, sadly I came down with norovirus and spent the day in bed. He had a chicken sandwich and played on his brand new Xstation360 games thing all day. He claims it was awful, but secretly he loved it.
The recipe I think I got from a Gordon Ramsay cooking programme quite a few years back, and I’ve made some changes to it over time, but credit where it’s due, thanks Mr Sweary.
The recipe is for 2 people, so 2 steaks, you can adjust up for more people. And treat yourself (if you drink) to a really good full bodied red wine, they really do complement each other.
So you’ll need
2 x fillet steaks
1 small onion – super finely diced
5-6 mushrooms – super finely diced
Some bacon lardons
2 handfuls of grated fresh parmesan
100ml of single cream
1 egg yolk
Thyme
Smoked Paprika
Salt
Pepper
Knob of Butter
Splash of olive oil
Heat a frying pan to medium and put in the butter, olive oil and bacon bits
Fry gently and keep stirring
Add the onion, salt, and pepper.
Sautee the onion for a few minutes until it’s starting to soften
Add the mushroom, and thyme, and keep frying on low until the onion and mushroom have completely softened and given up all their moisture.
Remove from the pan and quickly pat down on kitchen paper until it’s really dry.
Put in a bowl, with the single cream, egg yolk, and one handful of your parmesan, and mix well.
Heat your frying pan to maximum and heat your grill up to maximum as well.
Have a small baking tray ready for the steaks.
Oil and season your steaks and fry for 90 seconds on each side. (you can cook them for longer but I’ll be judging you)
When you’ve fried both sides of the steak, pop them on the baking tray.
Split the mixture over the 2 steaks, pile it up high but right to the edges, and then sprinkle with the remaining grated cheese.
Put them under the grill until the parmesan on top is golden and bubbling.
Serve with carbs and veg of your choice.
